
Hello to all. I’ve decided not to fight my business and work with it. Novel idea, eh? Well, it is back to basics for me. I just wanted super easy meals that would be yummy, light and easy on the pocketbook. Enjoy!
Friday: Grilled Cheeses and some sort of soup (probably tomato–not canned or condensed soup for those of you who are curious!)
Saturday: Chicken & Bean roll ups with carrot sticks
Sunday: Ravioli w/Broccoli, Carrots, Cauliflower & Alfredo Sauce with crescent rolls
Monday: class means packaged meals- I actually found these great little sandwich packs at Trader Joe’s for only a couple dollars. It includes a very hearty sandwich, carrot sticks, string cheese, chocolate graham cookies and a small water bottle. This is my new favorite packaged meal!
Tuesday: Baked potatoes with all the fixings
Wednesday: Spaghetti and Bolognese sauce with Garlic bread
Thursday: Chicken breasts rolled with bread crumbs and baked in a light lemon herb sauce, green beans sauteed in a little soy butter with lemon pepper seasonings

Do you have a good recipe for homemade tomato soup? I love homemade tomato soup, but have not been satisfied with my efforts in making it. There is a resteraunt down the street that makes the best stuff, it is creamy with chunks of tomatoes.

I don’t have a recipe of my own, but both of these are good recipes off of allrecipes.com. I’m not fond of chunky tomato soup, but there’s some reviews that say how to make it a little chunkier.
