This Week on the Menu 10/11

This is probably the oddest week for our menu. It is very irregular, but that’s okay! Things are very busy, so I’m going with some of the easiest meals possible. I only need a few ingredients, so the extra in my budget can go to stocking up and getting special treats. On another note, I’m throwing Eric a birthday dinner party on Saturday and making some of his favorite food. The menu’s a little larger than normal. Well, enjoy the menu!

Friday–Leftover meal from last week

Saturday–Dinner Party

Grilled Italian Garlic marinated Tri-tip Roast
Grilled Black Peppercorn Top Sirloin
Grilled marinated Pork Tenderloin
Grilled Lemon Shrimp skewers
Bacon and black pepper roasted corn
Medley of grilled bell peppers of all colors, zucchini and red onion
Garlic Mashed Potatoes
Garlic Cheese Biscuits
Fudge Crunch Ice Cream Cake

Sunday–Cinnamon French Toast and Apple Slices

Monday–Night class means packaged meals

Tuesday–Teriyaki Chicken Bowls made with tea steamed broccoli and white rice

Wednesday–I have an evening out with a friend, so Eric is going to have chili. I’ll probably have cereal before or something like that.

Thursday–Chicken enchiladas

This Week on the Menu 10/4

Mmmm, the flavors of fall: rich, warm, earthy. I love it!! My menu this week is very much based on those three descriptions. Enjoy the menu!

Friday- Hickory Smoked Pork Tenderloin, Roasted Potatoes and Glazed Carrots

Saturday- Stuffed chicken with brie and mushrooms in phyllo dough, broccoli steamed over red tea

Sunday- Parmesan walnut crusted turkey breast and cranberry (a pre-thanksgiving dinner)

Monday- Film and lit class: pkg meals to go

Tuesday- Franciscan night!- I’m in charge of desert, and I’m bringing vermont spice cake (utilizing pumpkin) with maple cream cheese frosting

Wednesday- Fish with spinach, lemon slices and red bell pepper en papillote with a sauteed scallop for each of us–I was going to have the fish tonight, but I only had really old fish that Eric caught. So, we’re gonna have it this week!

Thursday- Fettuccini Carbonara, Pecan Yam Casserole

Special breakfasts: Orange Chocolate scones
