This Week on the Menu 12/20

So, this week we only had one leftover meal. Last night we just decided to munch on whatever we were in the mood for…leftovers, cereal or some of the christmas munchies that my aunt Deanne sent us. The garlic steaks were really yummy tonight, but I put a little too much cajun seasoning in with the bell peppers. They were spicy! Anyhow, I’ve got both Christmas Eve dinner and all day of Christmas meals this week. Luckily, I’ve saved up for this.

Friday–Kung Pao Chicken stir fry (leftover meal from last week) with brown and white rice, fried bananas with either peanut butter or chocolate ice cream

Saturday–We’re going over to a friend’s place for a party, and I’m bringing snacks.—Savory Rye Snacks and Poor Man’s Toffee

Sunday–Some sort of packaged meal from Trader Joe’s

Monday/Christmas Eve–Traditional Mexican dinner that I ate growing up–Tamales, cheesy refried beans, pan dulce, horchata (I grew up drinking some citrus punch, but I thought Eric and I would like some horchata better)

Tuesday/Christmas–Cinnamon Rolls and Martinelli’s for breakfast, cheese and crackers and munchies throughout the day, and for dinner….honey and brown sugar baked spiral cut ham, garlic mashed potatoes, cornbread stuffing, green beans topped with roasted hazelnuts, biscuits

Wednesday–leftovers

Thursday–We’re flying down to visit my family, so we’ll be eating with them.

Hopefully, I’ll have the post with my Christmas cookie extravaganza pics up later tonight! Oh, and included will be a little snippet about Eric’s Christmas gift to me this year. Stay tuned……

This Week on the Menu 12/17

So, I keep forgetting to post my menus, but that’s okay. It’s nice to have time to actually make meals again! Well here’s the menu:

Monday–Honey Pecan Pork Chops, Gourmet Sweet Potato Classic

Tuesday–Pasta (whatever I have in the pantry) with a white wine, cream and tarragon sauce, Sauteed asparagus topped with just a little of the pasta sauce

Wednesday–Kung Pao Chicken with stir fry veggies and white & brown rice

Thursday–Savory Garlic marinated sirloin tip steak, mixed bell peppers tossed and cooked in cajun blackening seasonings

Out of pocket cost–$11.01 Incredible!
