Poll: Spring Fling

This week’s theme: Cheap cheap cheap!=Less meat, more pasta/rice/veggies

So thanks to our super fun trip this coming friday, we’re trying to keep it on the cheaper side. It’s not a dire need but more something we can do to make life a little easier. I’m also super busy, as usual, so I want to keep it as simple as possible. I’m probably going to poach all our chicken today, and I’ll pick up some fruit and veggies tomorrow from the farmer’s market. I might even pre-slice those to make dinners a cinch. Anyhow, here’s the menu.

Last night’s dinner on the run: Chicken w/lemon marsala glaze, garlic & basil linguine all tossed with melted soy butter, a teensy bit of extra-virgin olive oil, parsley, crushed garlic and freshly cracked pepper.

The dinners this week:
-Poached chicken w/ spinach and chive linguine tossed in piccata sauce
-Poached chicken w/ whole wheat penne in Newman’s Own Sockarooni sauce
-Poached chicken (see a theme here) tossed in a mandarin orange sauce with rice and steamed broccoli
-Blackened spicy chicken apple sausage in a southwestern salad with spicy ranch dressing
-Pork carnitas, guacamole, refried beans, cheese (for my hubby who can), tortillas–I might even go to the mexican bakery down the street and pick up pan dulce and make my own horchata (super easy and tasty!)
-Leftovers

Well, there it is. For those wondering, the chicken meals will not all taste the same. The chicken just acts as an easy, low-fat, low-cost meat to add in to our dish and not be the main part of the dish. Crystal over at Biblical Womanhood/Money Saving Mom gave me this idea. So props to her!
