Meal Plan Mondays
So…I haven’t done this in ages, but I figured I’d try to post something since I’ve heard about it from my sister and husband in the past week. Here’s the menu:
1. Migas with a Tomato-Chipotle Coulis a la Smitten Kitchen
2. Guinness Corned Beef with Garlic Potato Mash
3. Egg Drop Soup a la GreatDepressionCooking.com (Although, I’m adding celery and carrots to make it a full mirepoix base.)
4. Grilled Chicken and Pencil-thin Asparagus
5. Twice Baked Potatoes
I’m sure I’ll bake some stuff too but I’m not sure what yet. Happy Monday!
The Yummiest Food……ever!
So I think I’ve found the yummiest food in the world. No joke. I could drink this soup by the gallon. It’s THAT good! Here’s the link to the recipe:
One note–After straining (a very important step), season with a little salt and loads of pepper, to taste. If you have it, freshly ground smoked black pepper is superb.
